Runners need sustained energy and the food we eat is essential to achieving this. Oats are a complex carbohydrate. Rather than causing a spike in blood sugar levels, oats offer a steady release of energy, giving runners sustained energy.
Ingredients
- 2 eggs
- 2 tbs water
- 120g butter, melted
- 1/4 cup natvia or stevia
- 1tsp vanilla essence
- 1/2 cup plain flour
- 1.5 cups rolled oats
- 1 cup dried fruit of choice, chopped and with seeds removed (I used dates and sultanas)
Method
- Preheat oven to 170 degrees Celsius and prepare a baking tin.
- In a bowl add the natvia and butter. Mix together.
- Add the eggs, vanilla essence and oats and mix.
- Add the dried fruit and continue mix.
- Pour into baking tin and bake for 20 minutes, or until golden in colour.
- Once cool, slice into squares.
